Most of the farms are small and family run and are located on top of the mountains, the perfect environment for growing coffee! The berries are then selectively picked by hand and dried on terraces next to their homes.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eGrowing coffee sustainably means, among other things, excluding all types of environmentally hazardous substances, creating \"green corridors\" for wildlife and conserving all water sources in the area. The network grows larger every year, as more producers see the benefits that come with the work. The result is a clean, reliable brew with character.\u003c\/p\u003e\n\u003cp\u003eEven though Peru and Honduras may not sound that far apart, their harvest seasons differ significantly. The cooperatives are located about 3,500 kilometres apart \u003cem\u003e(roughly the same distance as from our roastery outside of Stockholm, Sweden to Addis Ababa, Ethiopia)\u003c\/em\u003e and on opposite sides of the equator. Both cooperatives are certified organic and Fairtrade, and the varieties are primarily Caturra, Pacas, Typica, and Bourbon – all processed using the washed method.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003ch6\u003eIncahuasi, Peru\u003c\/h6\u003e\n\u003cp\u003eWe’ve been buying coffee from Incahuasi since 2016. The cooperative is located in the Cusco region of southern Peru and was founded in 2005. The fact that the farms lie in valleys rather than on mountaintops says something about the altitude – between 1,700 and 2,300 metres above sea level. It takes many hours by car to get there, and the remoteness has helped protect the farms from the coffee diseases that are spreading around the world.\u003c\/p\u003e\n\u003cp\u003eToday, the cooperative has 480 members who work hard to steadily improve quality. Investments in drying beds and processing equipment have made a big difference. In recent years, the co-op has also begun producing micro-lots from individual members – creating an incentive for everyone to produce better coffee and earn a better price.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003ch6\u003eComicovel, Honduras\u003c\/h6\u003e\n\u003cp\u003eWe started buying from Comicovel in 2022.
