LITTLE DRINK BOOK

Summer is here and what's better than an icy refreshing drink in the shade? Together with the bartender team at Restaurang Surfers, we have created a bunch of absolutely delicious drinks! Both with our ice teas from Dear Tea Society and of course some future classics with our Cold Brew Concentrate.

The drinks can be used straight off to create your summer menu or as an inspiration when it is time for the big garden party.

COLD BREW CONCENTRATE

Our Cold Brew Concentrate is made from specialty coffee from Brazil and is gently roasted to bring out all the unique flavours. Our roasters maximize all the different phases of the roasting to really bring out the sweetness and to develop the deeper chocolate and caramel notes that are naturally found in coffee. Imagine orange and cherries that break nicely with the heavier chocolate and nutty tones! Then we brew the coffee for 15 hours in cold water with double amount of coffee, and this is how we get a concentrate.

Mix it with equal parts water or milk for a quick and good cold brew or ice coffee. Of course, you can also have it as a base in cocktails instead of espresso.

COLD BREW Aperitif

Let's introduce the classics of the future when it comes to an after-dinner drink! A sparkling cocktail with a lot of character.

2 cl dark rum
2 cl Kahlua
5 cl Cold Brew Concentrate

Stir all ingredients in a tube glass together with ice, then strain into a cocktail glass and top with loose whipped cream. Garnish with freshly ground coffee.

ORANGE SMORANGE

A southern European love affair where the line between dessert and drink is really put to the test.

1 cl Cointreau
1 cl olive oil
2 cl vodka
5 cl Cold Brew Concentrate
1 cl salty caramel sauce

Shake all the ingredients together with ice in a shaker, then pour into a cocktail glass, and grate a little dark chocolate on top.

clOUD BREW

The adult version of a milkshake. Creamy, fluffy and almost irresistible.

2 cl Frangelico
2 cl vodka
5 cl oat drink
5 cl Cold Brew Concentrate
1 cl simple syrup

Shake everything except the Cold Brew Concentrate in a Shaker. Pour Cold Brew Concentrate into a highball glass and then continue with the contents from the shaker. Fill with ice, top with loosely whipped cream and garnish with hazelnuts.

HIBISCUS CRAFT SODA

First we made an iced tea with red hibiscus flowers, then Pop Art in Umeå and refined this by mixing it with cane sugar to soften the slightly sour berrylike flavours. Then this craft soda was easily carbonated to create a perfectly balanced drink that is wonderfully invigorating and refreshing. This is a collaboration between Dear Tea Society and Pop Art Craft Soda - two Swedish companies based on principles of transparency, sustainability and tasty flavours.

HIBISCUS CRAFT SODA

HIBISCUS GARDEN PARTY

The Hibiscus in our Craft Soda gives this drink its irresistible red color and a slightly bubbly spritz! A tart yet sweet twist on a Pisco Sour.

4 cl Pisco
3 cl lime juice
2 cl simple syrup
10 cl Hibiscus Craft Soda

Shake all ingredients except Hibiscus Craft Soda with ice in a shaker. Place a large ice cube (regular ice works too) in a rock glass and strain the drink into the glass. Top with Hibiscus Craft Soda and garnish with an edible flower.

HIBISCUS CRAFT SODA

HIBISCUS SANGRIA

As sweet and sour, as fresh as tasty. This sangrian is the perfect thirst quencher on a sunny summer day.

12 cl gin
9 cl lemon juice
6 cl simple syrup
8-10 basil leaves
6 strawberries
2 cans Hibiscus Craft Soda

Cut the strawberries into smaller pieces and then place them together with the basil in a jug. Continue with gin, simple syrup and lemon juice and fill the jug with ice before stirring thoroughly. Top it off with Hibiscus Craft Soda and stir a little more. Then it is ready to be served! A jug is enough for about 3-4 drinks.

Dear T is a genuine iced tea. Carefully hand brew on thoroughly selected organic teas. Here the teas are in focus, the drink is only slightly sweetened to clearly maintain the tastes of the teas. If you like tea as much as we do, then you will love Dear T.

DEAR T MANGO & CITRUS

Louisiana Ice tea

Fresh, hot and tropical. This is how this drink is best described. A refreshing and invigorating classic iced tea.

4 cl light rum
3 cl lemon juice
2 cl simple syrup
1 cl ginger juice
10 cl Dear T Mango & Citrus

Shake all ingredients in a shaker. Pour the drink into a highball glass and fill up with crushed ice. Garnish with a slice of lemon.

DEAR T CHERRY & LEMON

CHERRY TO MY TOP

A sweet yet sour variation on the Amaretto sour with a clear taste of almonds and cherries.

2 cl Amaretto
3 cl dark rum
2 cl simple syrup
4 cl Dear T Cherry & Lemon

Shake all ingredients in a shaker, then strain into a low glass with a large ice cube. Garnish with maraschino berries or cherries on top.

DEAR T ELDERFLOWER & APPLE

RESPECT YOUR ELDERS

A classic summer cocktail where the taste of elderberry really shines while having a clear iced tea character.

2 cl vodka
2 cl St-Germain
4 cl lemon juice
2 cl simple syrup
1 cl egg white
10 cl Dear T Elderflower & Apple

First, Shake all the ingredients without ice, then add the ice and shake a little more. Strain the drink into a cocktail glass and sprinkle on some elderflowers to get a lovely scent when enjoyed.

DEAR T GINGER & LEMON

ZEstY MARGUERITE

A classic margarita with a twist of ginger. Perfectly accompanied by the fresh taste of our iced tea.

4 cl tequila
2 cl simple syrup
4 cl lime juice
1 cl ginger juice
8 cl Dear T Ginger & Lemon

Shake everything in a shaker, then strain the drink into a rock glass with salted rim and large ice cube. Top with Dear T Ginger & Lemon and garnish with lime.

DEAR T MANGO & CITRUS

VANILLA MAY

Tropical and sweet vanilla meet fresh and lively iced tea, and the result is absolutely amazing.

4 cl vanilla vodka
4 cl lemon juice
2 cl simple syrup
3 cl passion fruit juice
5 cl Dear T Mango & Citrus

Shake all ingredients in a shaker. Then pour the drink into a low glass and top up with crushed ice. Garnish with a cut passion fruit and a little mint.
