We’re thrilled to finally get our hands on this highly sought-after lot from Yeltsin Sagastume – a producer we’ve followed for years and are now able to highlight in our Farmers series. His calm precision gives this Parainema a bright, crystal-clear expression with sweet blackberries, crisp grapefruit and soft brown sugar. A beautiful example of Yeltsin’s touch and his family’s uncompromising focus on quality.
This coffee feels almost historic for us. We have followed the Sagastume family in Honduras for several years – with great respect, plenty of curiosity and a quiet hope that one day we’d be able to work with one of their small and highly coveted lots. To finally be able to buy a coffee from Yeltsin Sagastume feels both meaningful and genuinely exciting.
This is a cup that captures everything we appreciate in Yeltsin’s work: clarity, balance, calmness and the gentle elegance that Parainema can show when handled with care.

Yeltsin Sagastume
Yeltsin is one of three brothers in the Sagastume family – a producer family known for patience, care and an almost serene way of working. We’ve had our eyes on them for a long time, and their coffees are often among the most sought-after in the region.
When Jonas visited Yeltsin in 2024, it was the atmosphere around the farm that stood out most. Everything is small-scale and close to home: children riding scooters between the houses, sacks of parchment stored in the hallway, and coffee trees growing in harmony under natural shade. It’s a place that feels warm, alive and full of intention.
Parainema is a hybrid variety bred for resilience, but here it takes on a surprisingly elegant character. Yeltsin’s attentive work in cultivation and processing results in a cup that is both clean and beautifully defined.
The washed coffee then moves to the renowned San Vicente dry mill, where it is sorted and refined with the same precision that Yeltsin shows in the field. Together, this gives a cup with an immediately clear and refined profile.
Roast Profile
This is the first time we are roasting Parainema – and the excitement was obvious in the roastery. A new variety always sparks extra curiosity. Filip began on our Ikawa, exploring how the beans respond to heat, density and airflow.
It quickly became clear that Yeltsin’s Parainema has a natural balance. It holds its acidity well, responds smoothly to heat and shows clean fruit from the very beginning. Filip chose a light and controlled roast profile to highlight the blackberry sweetness, the fresh citrus brightness and the soft brown sugar note. The result is a cup that feels as calm and precise as the producer himself.
Introducing Yeltsin Sagastume in our Farmers series feels like an important and genuinely meaningful step for us. He is a producer we have long hoped to work with – and now he’s finally here. House is the foundation we stand on and here we offer specialty coffee From some of the 15 producers we work closely. Everyone is among the best in the world. Each coffee in the series has its unique mix and taste profile. Thanks to the width of the series, we dare say that there is a taste for (almost) everyone. We vary origin and recipes to follow the harvest periods that vary during the year between different parts of the world. Flavours Is all about lifting the natural flavors in every coffee. The contents of the bag change in line with the harvest periods that vary during the year in different parts of the world. Most coffee is single Origin, but sometimes we can feel that a mixture is what is best in line with the coffee's taste profile. Flavours is perfect for those who are looking for an exceptional cup. A cup that really accentuates the unique taste and character of the coffee.

In the series Prime we offer the spearhead of specialty coffee. The quality and taste is unbeatable and it is often an experience in itself to drink one of these coffee. We release them only 3-4 times a year, making the coffee in the series extremely rare and very sought after. We only have around 200 bags at a time! These coffee is often of an exclusive variety, produced by modern and innovative methods. For those looking for the ultimate coffee experience, we dare to guarantee that the Prime series will satisfy even the most sophisticated taste preferences.
We specialize in specialty coffee, which means that all the coffee we purchase scores at least 80 points on a 100-point scale – a grading system established by the international coffee organization SCA.
We hold high standards for the producers we work with, both in terms of sustainability and quality. Both aspects demand more and come at a cost, which we gladly pay. The right price is worth every cent!
