This is a coffee from Peru or Honduras depending on the season, always with flavours of caramel, nougat, and red apples.
Our coffee comes from two cooperatives - Incahuasi in Peru and Comicovel in Honduras. We rotate the origins in late spring and then again in the beginning of the winter, so we can ensure that the coffee is in season and fresh-tasting throughout the year. Since these cooperatives are about 350 miles apart on different sides of the equator the harvest seasons differ giving us fresh deliveries twice a year. Both cooperatives are Fairtrade and organic certified and the coffee is mainly composed of Caturra, Pacas, Typica, and Bourbon varieties, which are processed using the washed method.
We have been buying coffee from Incahuasi since 2016. The cooperative is located in the Cusco region of southern Peru and was founded in 2005. The fact that the cooperative is located in valleys rather than high up in the mountains says a lot about the altitude. The plantations here are located between 1700 and 2300 meters above sea level, and it takes many hours by car to get there. Thanks to the inaccessibility, the plantations have been spared from most of the coffee diseases that are spreading more and more around the world.
Today, the cooperative has 480 members who all work hard to gradually improve the quality. They have invested in drying beds and equipment to be able to process the coffee better. Since a few years back, they also produce micro-lots from individual producers in the cooperative that are sold separately. This creates incentives for everyone to produce better coffee and thus get better paid.
We started buying coffee from Comicovel in 2022. The cooperative was founded in 2016 as a result of the Catholic Relief Services project ‘Blue Harvest’. It is about the agronomic development of the forest, as well as the efficient use of water resources. The project brought together several ambitious producers in the Opalaca area, who founded the cooperative. The otherwise relatively barren landscape comes to life thanks to the extensive agroforestry that helps maintain moisture and makes the coffee trees flourish. The area is located in western Honduras, about 20 miles west of the capital Tegucigalpa, and most plantations are located between 1400-1800 meters above sea level.
Today, the cooperative has 200 members who continue to focus on the forest and water use, while continuously improving the quality of their coffee. Last year, the cooperative started producing and separating micro-lots, and they have also invested in raised drying tables for some producers.

The Farmers series. is a tribute to the skilled and dedicated producers which we have a close relationship with. For this series, we purchase limited quantities of specific lots that really stand out when we taste them. It could be the variety or a specific part of the farm that truly brings out the best in the coffee. The flavours of these coffees are often sweet and floral, with hints of fruit or berries, broadening the horizons on what coffee can taste like. It is with a lot of pride we highlight our producers and their incredible craftsmanship.
The Prime series is the top tier of specialty coffee. These coffees are of unmatched quality and flavour and drinking them is an experience itself. Sourced only 3-4 times a year, our Prime coffees are extremely limited and highly coveted, with only around 200 bags available of each. These coffees are often of exclusive and rare varieties and produced using modern and innovative methods. For those seeking the ultimate coffee experience, our Prime series is sure to satisfy even the most refined palates.
We specialize in specialty coffee, which means that all the coffee we purchase scores at least 80 points on a 100-point scale – a grading system established by the international coffee organization SCA.
We hold high standards for the producers we work with, both in terms of sustainability and quality. Both aspects demand more and come at a cost, which we gladly pay. The right price is worth every cent!
